Albus Grand Hotel has just been refurbished with a new restaurant. For homoseksuals a perfect location as all the bars are around the corner. Simple but well organized! They do what they're good at, provide a perfect room, nothing else. If you want to have breakfast at the hotel, do so. I however would go out and enjoy a local breakfast-spot and be with the Amsterdam working crowd.
